You can obtain/tame the Panda using Bamboo found in Bamboo forests. After taming, they will follow you unless commanded to sit or if hungry (feeds on bamboo).
When fed, they produce an item called “Hollowed Bamboo” useful for crafting.
The Saddle cannot be crafted but can be obtained from merchants or found in dungeons.
Place it on the tamed mounts (ice bear/ostrich/raptor) to control your riding experience.
Raptors are found in Redwood Land and can be tamed using Roasted Whole Chicken. Beware that lowering their health is necessary before feeding them to tame effectively.
